Quality forage for the "King of cheese".
If the forage is good quality then so is the milk... and therefore so is the cheese.
To date Stefano Benatti, his son Christian and their farm in San Martino di Guastalla (Italy) has about 230 Red Cows, 90 of which are lactating.
Time is spent in the stall in regular cycles and milking is carried out twice a day. “ On average a Red Cow, the Reggiana breed, produces one third of the milk of a Holstein Friesians. – explains Stefano – But the milk is of extraordinary quality, rich in casein, therefore processing is subject to strict regulations that govern the production of Parmigiano-Reggiano from Red Cows. ”
Beginning with the diet, which must be traditional, based on grass, hay, chopped forage and OGM free feed. “ The cow’s diet is the basis of everything. If the forage is good quality then so is the milk… and therefore so is the cheese. This is why it is crucial to cut the grass with leading-edge equipment. ”
